Its cucumber season here in Maryland so that means creating new recipes using this incredible vegetable.
That being said I have a toddler and new little bundle on the way so quick lunches around here are a must! This easy cucumber sandwich has been a recent favorite and I hope you love it too!
2 slices of whole wheat, or muti-grain bread
hummus of choice (I vary depending on what we have in the fridge)
cucumber sliced lenght wise in thin slices
slice of cheddar cheese
This sandwich not only rehydrates (cucumbers are 95% water) but in addition to all the health benefits its a great source of vitamin B. This helps with a quick pick me up and actually can help easy anxiety.
